Egg-less cakes for my vegetarian mum and her friends.
The chocolate muffins were from my wacky cake recipe, which uses vegetable oil and no eggs at all. And I came up with this cranberry and peach muffin, replacing the butter with margarine and eggs with yogurt.
Not too sure why my mum says yogurt is ok, but not butter. Aren’t the two from the same source? Scratch head.
The cranberry and peaches adds a natural sweetness to the muffins, and smells really really good (they taste really yummy too).
